Do any one monitor what page or section on your site for googlebot activity. In the case you want to block or open some pages or categories on your website for Google visits. How to do this? where to set?

You can disallow googlebot from indexing any page of your website by adjusting your robot.txt file. If you use wordpress than it's even easier

If you have experience at such things - yes adjust robot.txt file.
If you don't have it is better to let someone to do it who knows it well, my friend who doesn't know well how to do it, blocked all the site, instead of some pages and found out it after a week)

You can allow google-bot or disallow google-bot through your robots.txt file located in root folder of you website.
